Pumpkin Seeds

This was the first year that I saved all of the pumpkin seeds from the pumpkins my kids carved. It might be because I developed a love for pumpkin seeds over the past few months after buying them from Whole Foods. Luckily, I mentioned to my mom that I was going to try it, and she brought over three recipes for Roasted Pumpkin Seeds. I decided to try the Sweet and Salty version, and yes, they are delicious. If you are going to be using any fresh pumpkins this year, save those seeds and toast them at 300F for 30 minutes to dry them. Then, they are ready for the recipe below. Or, you can buy plain pumpkin seeds and give them a little sweet and salty treatment.

Sweet and Salty Pumpkin Seeds

  • 2 Cups dried pumpkin seeds

  • 2 Tablespoons melted butter

  • 3 Tablespoons brown sugar

  • 1/2 teaspoon coarse salt

  • 1/2 teaspoon cinnamon

Toss everything together and roast at 350F for 15 minutes. Enjoy!
