My mom recently went vegetarian, and it has inspired me to make more vegetarian meals. (frankly, I've grown a bit tired of throwing chicken in everything)
So, I'm on the hunt for good recipes and my first stop was the blog 101 Cookbooks. I bookmarked loads of recipes to try; up tonight is the Double Broccoli Quinoa you see above. If any of you have other great suggestions, please let me know!
